Ingredients serves 2

1 Tub Five Tastes Thai Green Curry Paste

1/2 Brown Onion Diced

2 (approx. 250g total) Pork Loin Fillets Grass Fed

1 1/2 Cup Frozen Vegetables (I used Cauli, baby carrot and mixed greens 1/2 cup of each)

2/3 Cup Cooked Jasmine Rice

1Tb Olive Oil

1/4 cup Coconut Milk (*can use evaporated coconut milk if you prefer)

 

Method

Dice onion and chop pork into bite size cubes

Heat fry-pan or wok with oil

Add meat, Curry paste and vegetables and stir fry until meat is almost cooked

Add coconut milk and stir fry until mixed through

Serve each serve with 1/3 cup cooked steamed jasmine Rice.

 

Tip: Rice can be made a head by absorption method, cooled down and frozen

Then reheat with 1Tb water in microwave for 1 – 1/2 minutes
