This recipe was inspired by Rick Stein Visit to the Greek islands. This is my version using lime instead of lemons as I ran out of lemons.
#1 Served with Steamed Vegetables Frozen baby carrot and broccoli
#2 Served with Bought Coleslaw and Garden Salad with baby plumb tomato, cucumber and lettuce
Ingredients serves 2
2 Large Breast Chicken Fillets sliced in half each
1/2 lime juice
1tsp cayenne pepper
1 tsp chili powder
Cut each breast fillet in half lengthwise to make 2 smaller fillets
mix ingredients together and rub on both sides of fillets.
Cook in non stick pan with cooking spray for turn after about 4 minutes then place lid on top to finish cooking chicken inside
Check if cooked through then serve with your choice of sides.
Can be done on BBQ
