Salads: Feta Salad

Using up ingredients this week.

I bought feta which keeps for a long time so decided on my version of a Greek salad.

This is also a meat less meal.

Serves 1

1 Slice Feta (approx. 30g) (Low sodium one)

1 Pineapple Ring

1 slice Red onion

1 handful mixed leaves

3 cherry tomatoes

1Tb Sliced black olives

2 Slices Beetroot (fresh is best but canned will do)

 

Method

Cut feta into smaller pieces.

Place lettuce in middle of the plate.

Top with remaining ingredients around the plate.
