Egg Cups

Egg Cups : Bacon, tomato, Capsicum

These make a great quick breakfast when  you don’t have time but want something to tie you over.

You can add any vegetables or meat, chicken, bacon.

Great for using up ingredients

 

Serves 12 (or 6 if you have 2 per serve)

Ingredients

4 Organic Free Range Eggs Beaten

1/2 Cup Diced Capsicum (mixture of colours)

Options :

Add Bacon or ham

Add Cheese (even parmesan)

Add Tomato or Green Shallots

 

Method

Beat eggs then add the capsicum and other options to your liking.

Place 2Tb of mixture into patty cases in muffin tin

Bake for 15-20min 180*c
