Thai Basil & Chili Chicken

Homemade Thai Basil Chili Chicken

I love a good Thai paste to save time. I pick jars up at the Asian supermarket for cheaper than the supermarkets.

This one is Thai Basil and Chili Paste.

 

Per serve I use

1-2 tablespoons of the paste

200g chicken

1/2 cup stir fry frozen vegetables

1/3 cup Steamed Jasmine Rice – I use the 90 second microwave pouches

 

Method

Slice chicken into strips or cubes then cook in skillet until brown almost cooked through

Add spice paste and vegetables and stir fry a further 2 minutes

Place pouch of rice with corner cut in microwave for 90 seconds (you can do 2min max)

Serve.
