Herb & Garlic Schnitzel with Corn Salsa

Great flavours with this homemade corn salsa gives the herb & garlic beef schnitzel a lift .

The salsa could work well with other meats or fish or poultry.

I have served only 1/2 the schnitzel as it was huge.

 

Ingredients serves 1

1 Herb & Garlic Beef Schnitzel (cook a whole one but use 1/2.  keep half for another meal)

6-10 Wedges Baked

1/4 Cup Sliced Carrots

1/4 Cup Green Beans

 

Method

Preheat oven 180*C

Spray baking tray with olive oil cooking spray

Place schnitzel and wedges on tray and then spray top of food with cooking spray

Cook for 20 minutes. Turn and cook for a further 15minutes.

Meanwhile make the salsa and steam the vegetables.

Steam vegetables in microwave bowl cook on high 3-4 minutes then drain juices.

 

Salsa: Serves 4

30g Corn

1  Cheek of Red Capsicum diced

1/2 Onion diced

1tsp Minced Garlic

1Tb Sundried Tomato diced

1/2 Tomato Diced

1tsp Organic raw Sugar

1Tb Balsamic Vinegar

1Tb Organic Apple Cider Vinegar

1tsp Dried Mint (you could use basil or parsley)

 

Method:

Dice vegetables to same size as corn for even cooking

Place all the salsa ingredients in microwave bowl and cook for 90seconds on high

Serve with Schnitzel and vegetables
