Breakfast are my challenge at the moment cause I don’t want to make them but having a go at some different options.
Omelette are easy to make and uses up ingredients you may need to get rid of
They are filling and colourful.
Ingredients Serves 1
2 Organic Free Range Eggs
1 Handful fresh basil leaves from vegepod
30g Sun Dried Tomatoes
3 Slices Smoked Ham
Olive Oil Cooking Spray
Beat eggs in a bowl.
Slice and dice tomato and ham and basil
Heat non stick wok and spray with cooking spray
Pour eggs into pan and swirl until bottom is coated with eggs
Then add other ingredients .
Cook for 1-2 minutes until eggs are no longer in liquid form.
then fold in half and flip cook a further minute then slice in half down middle
Plate Omelette and enjoy!
