Sausages : Curried

Curried Sausages

I haven’t made this recipe before now and it worked well.

I don’t often eat sausages but had to use some up.

Making my own sauce was a pure experiment as I don’t normally make it with rice flour.

 

Serves 2 Large serves

4 Thin Sausages

1/2 cup Peas

1/2 Cup Frozen Carrot Batons

 

Sauce :

1Tb  Mustard Powder (keens)

1Tb Curry Powder (keens)

1Tb Dried Parsley

2 tsp Rice flour

1 egg

Pinch Sea salt

Pinch Black Pepper

1/3 cup Coconut Evaporated Milk

 

Method:

Cook sausages in non stick skillet until cooked through

Then cut sausages into 5 equal sizes

Add sauce ingredients and stir until sauce is blended and thickens

Add peas and carrot

 

Serving Options: 

1/ On its own

2/ with rice

3/cauliflower rice

4/ With toast
