Had some fish in the freezer that needed to be used and some frozen chips.
Winning dish when you want takeout fish and chips but better cause you cooked in oven without frying in oil
Ingredients Serves 1
1 Aldi Frozen Fish Fillet boneless
1/4 Packet Frozen Chunky Chips
1 handful coral lettuce
3 cherry tomatoes halved
1/2 baby carrot grated
1 pineapple ring
1tsp Vietnamese Dressing
1 tsp dried dill
1/2 lemon cut into wedges
Spray chips and fish with cooking spray on both sides and cook in preheated 180*C oven for 20 minutes
then flip and cook for another 15 or until fish is cooked through
Meanwhile prep the salad. Cut tomatoes into half, grate the carrot and place on plate with lettuce and pineapple.
Drizzle over the dressing
Serve with lemon cut into half making 2 wedges.
Sprinkle fish with the dried dill just before serving.
