This weeks meals are on a budget.
I picked up a whole large uncooked chicken for $5 and put it in pressure cooker and cooked it on the chicken cooking setting for 30 minutes.
I also got a boneless pork roast on special and slow cooked that with Pete Evans Recipe for Pulled Pork (homemade bbq type sauce).
So I will be using the meat from these to create this weeks menu.
1/ Zucchini Spiral Noodles with Homemade Chicken Stroganoff using some of the pressure cooker chicken (Chicken strog recipe from Family Circle Tempting Chicken Cookbook, I used greek yogurt instead of sr cream)
2/ Pressure cooker chicken breast, zucchini spirals, Frozen baby carrots, steamed jasmine rice
3/ Zucchini Spiral Noodles with Homemade Coriander Greek Yogurt Sauce and Pressure cooker chicken (recipe for homemade coriander Greek yogurt sauce in other post)
4/ Sundried Tomato & Basil Tuna with Organic Spiral Pasta- Cost $2
5/ Pressure cooker Chicken with Steamed Broccolini and Roasted Pumpkin/potato leftovers
6/ Slow cooked Pulled pork with crackling, baby carrots and steamed jasmine rice
7/ Pressure Cooker Chicken Breast with Cos Lettuce, Vegepod Parsley and Plumb Sauce leftover.
