Stir fry Asian

Simple and quick meals. Only a handful of ingredients and some rice and you have a meal in under 15minutes.

Cook rice by absorption method – don’t drain rice :

1 cup raw rice and 2 cups hot water

cooked in microwave for 15minutes then fluff with fork.

Makes 4 Cups cooked rice)

Pork In Plumb/Hoisin Sauce with Dried Cranberries

Ingredients: Serves 1
1Tb Peanut Oil
100g Pork Fillet cubed
1Tb Plumb Sauce
1Tb Hoisin Sauce
1Tb Dried Cranberries soaked in warm water to plump up
1/2 Cup Mixed Carrot, Beans & Cauli Frozen
1/2 Cup Cooked Basmati Rice
Method:
Cook Pork for 1-2 minutes  in Peanut Oil in fry-pan/skillet
Add Vegetables and Sauce and Stir fry further minute
Serve with Cooked Rice


Thai Chili and Thai Basil Chicken

Ingredients: Serves 1

1Tb Peanut Oil

100g Chicken Breast cubed

1Tb Thai Chili & Basil Paste

1Tb Fresh Thai Basil from garden

1/2 Cup Mixed Carrot, Beans & Cauli Frozen

1/2 Cup Cooked Basmati Rice

Method:

Cut Chicken into cubes and cook Chicken for 3-4 minutes  in Peanut Oil in fry-pan/skillet

Add Vegetables and paste and Stir fry further 2 minutes until chicken is cooked and mixed through.

Toss through the Thai Basil Leaves at the end.

Serve with Cooked Rice


Thai Green Curry Chicken

Ingredients: Serves 1
1Tb Peanut Oil
100g Chicken Thigh Fillet cubed

1 Five Taste Green Curry Paste Pot

1Tb Thai Fish Sauce

1Tb Milk
1/2 Cup Mixed Carrot, Beans & Cauli Frozen
1/2 Cup Cooked Basmati Rice
Method:
Cube and cook Chicken for 2-3 minutes  in Peanut Oil in fry-pan/skillet
Add curry paste, fish sauce, milk and Vegetables and Stir fry further 2-3 minutes until chicken is cooked through
Serve with Cooked Rice
