Paleo: Pan fried Duck with balsamic

Duck breast with organic vegetables

Serves 1

1 duck breast

1/2 organic zucchini

1/4 organic red capsicum

1/2 large organic carrot

2 organic button mushrooms

1Tb balsamic vinegar

1tsp water

Method

Heat frypan add balsamic and water

Add duck skin side down and hold it down until you gear crackles/bubbles then turn duck over and place lid over it then vook another 3 or so minutes. Option 1/Turn off heat and rest duck until needed. 2/ remove duck to board to rest.*but keep pan juices

Cook vegetables in microwave steamer for 4 minutes.

Serve with duck and pan juices
