Slow cooked pork butt

Ingredients serves 6-7

1kg pork butt/shoulder

1Tb fennel seed

1Tb thyme

1TB sage

3 cloves Garlic minced

2Tb 100%all natural honey (straight from bee hive)

1tb seeded mustard

2Tb white wine vinegar

1/2 cup chicken stock

1Tb brown sugar

METHOD

In slow cooker place pork in then

Rub spices on both sides then pour remaining ingredients over top of the pork

Put lid on slow cooker and cook on high for 4hrs or on slow for 8hrs.

*retain pan juices

Rest for 1/2hr before slicing. Cut thin slices with fillet knife 2 slices per person

Serve with salad or steam veg

*Make juices from pan into gravy or jus to serve with pork
